This book on seasonal cuisine and wine brings together the talents of two exceptional people, chef Jean-Sébastien Giguère and sommelier Hugo Duchesne. CLIMATS: CUISINE + VIN AU GRÉ DES SAISONS is the ideal companion to concoct meals that are out of the ordinary, for a tête-à-tête, with family or friends, and to help us find the right bottle or bottles to make the magic happen.

In the kitchen, the chef offers recipes based on seasonal arrivals and the best local products. We find some of the classics that have made the reputation of the restaurants Le Coureur des Bois, La Cabane du Coureur and h3, but also family recipes that honor his Italian roots. On the wine side, the sommelier invites us to go beyond simple food and wine pairing.
For each recipe, he highlights the elements of the dish that will guide him in his reflection and direct his choices, whether it be the ingredients, the type of cooking or a flavor. He shares with us his questions, his hesitations, but also his desire to offer us unexpected combinations and to help us discover new grape varieties.

The recipes follow the seasons: spring, summer, fall, winter. Fifteen recipes per chapter with, for each, a proposal of three wines in ascending order of price. And to complete the picture, a few basic recipes: pasta, broths, sauces and dressings as well as a few extras.
